    To Die For Frozen

    Dessert:

    You will need:

    A box of chocolate ice cream sandwiches with vanilla ice cream in the

    middle
    1 bowl Cool-Whip
    caramel sundae topping
    chocolate sundae topping
    Kahlua
    Heath toffee

    bits
    chopped, toasted pecans


    Put a single layer (12) of the ice cream sandwiches in the bottom of a

    casserole dish. Drizzle a third to one-half a cup of Kahlua over the sandwiches. Liberally drizzle both the caramel

    and chocolate sundae toppings. Pour on half a bag of Heath toffee bits. Add a single layer of Cool Whip over the

    Kahlua (use the whole bowl if you can). Top with toasted pecans.
    Pop in the freezer for an hour or so, then

    serve.


    Edited because I forgot the toffee bits and because I put the Cool Whip out of order.

    Just got this recipe a

    couple weeks ago. It's pretty good.

    Crawfish or Shrimp Ettouffee:

    Melt 12 Tablespoons Butter in a large

    saucepan.
    Add 1/3 cup flour and cook over medium heat, stirring frequently until light brown.

    Add:
    2 finely

    chopped large Onions
    1 Finely chopped Bell Pepper
    1/4 Teaspoon Pepper
    5-6 minced Garlic cloves.

    Cook over

    medium heat until veggies are cooked and lightly browned.

    Add:
    2 pounds peeled, deviened Shrimp (40-50 count)

    or 2 ponds cleaned Crawfish Tails
    2 Tablespoons Lemon Juice
    2-3 Tablespoons Cajun Seasoning.
    Enough Water to

    cover.

    Bring to a slow boil and simmer covered about 30 minutes. If you plan to store to reheat later, thicken

    with some cornstarch dissolved in water to retain consistancy.

    Just before serving add 1/4 cup chopped green

    onions.

    Serve over rice.

    PS: I finally got a sourdough starter that's been in use for about 10 years. My

    first batch of bread is rising right now.

    That looks delicious. I have never

    tried crawfish. After watching my friends put on a show with their little bodies at Sandles Resort, I just can't

    bring myself to try one.

    Try it with shrimp. Crawfish is delicious but I

    understand the problem. Just buy the cleaned tails.

    You can get it to be a little more authentic by buying the

    shellfish raw. Boil it all in Zatarain's Crab Boil. And use green onions instead of yellow or white onions, and add

    some celery (Green onions, bell pepper, and celery are call Holy Trinity. Nobody cooks without 'em.) Same with the

    seasoning. Buy Zatarain's. That's what people in Lousiana use. Or, if you're feeling lazy, just pick up a box of

    Zatarain's Etouffe. You can just add the shrimp, crawdads, chicken, pork, or whatever kind of mean you want. It's

    really very good, the seasonings are absolutely authentic, and you can use it as a very good yardstick for working

    from scratch. Damn. Now I'm hungry.

    The

    recipe calls for the shellfish to be raw when you add it to the pan. I use Zatarains but didn't know of it was

    available to everybody so didn't specify. The green onions, if used in the begining, would completely disolve,

    that's why you only add green at the end. Now that I've worked with it a couple times I will experiment to see if

    I can make it better but this way is pretty good.

    You can also find the

    Zatarain's products up here in New England at some supermarkets. I really like their ready to make pack of pasta

    shells - can't recall now what it's billed as but I sure do love it (it's been a while too since I've had it and

    now I'm thinking, might be good to get some today). It's a bit more spicy I think than some of their other

    products and that suits me just fine.

    custard concrete?

    Do you guys have "Taste of Thai" in Mississippi? If not you should order some from online.

    It is so authentic and so easy to use. They also have some fantastic recipes on their site.
