3 cups graham cracker
crumbs
1/2 cup sifted confectioners'
sugar
1 stick plus 1 tablespoons butter,
melted
Preparation:

350ยบ.
Place the crumbs in a bowl and stir the sugar and butter into the
crumbs until well blended.
Press the mixture with a wooden spoon or the
palm of the hand into a 12" spring-form pan.
Bake for 10 minutes, remove
from oven and cool completely before filling.
If preparing crust ahead
of time, keep chilled in refrigerator.
Ingredients For the
filling:

oz. softened cream cheese
1 stick softened
butter
1 cup sifted confectioners'
sugar
1 1/2 tablespoons
tequila
1/4 teaspoon
salt
Preparation

=indigo][/color]Beat cheese and butter together with an electric mixer until
light and fluffy.
Add remaining ingredients and beat until thoroughly
blended.
Spread evenly in pre-baked crust and chill in refrigerator at
least 2 hours before topping with the glaze
(below.)

1/2 cup
sugar
2 tablespoons
butter
2 tablespoons freshly-squeezed lime
juice4 tablespoons triple
sec2 tablespoons
tequila1 tablespoon cornstarchPreparation

aside
Combine remaining ingredients in a medium-size saucepan, bring to a
boil and cook, stirring with a wire whisk, over medium heat until thickened and smooth.
MEXICAN CHICKEN CASSEROLE
4 chicken breasts
(cooked)
1 doz
tortillas (corn)
1 can
cream of chicken soup
1
can mushroom soup
1 c
milk
1 can green
chili salsa
1 lb grated
cheese
Put layer of diced
chicken in pan. Tear tortillas in quarters and lay over chicken. Mix soups, milk & salsa. Spread over tortillas.
Top with remaining chicken. Let sit in frig 24 hours. Top with cheese. Bake 1‑1/2 hrs. at 300

I invited a friend over for
dinner tonight. So I wanted to impressed him with some good home-made food.
Well at first I thought of
making some Green Chichen Enchiladas and some spanish rice to go on the side ( those I make pretty good ).
But, I
didn't have some of the ingredients to make that and I wasn't in the mood to go grocery shopping so I decided to
try and make something different. So instead I decided to make MeatLoaf & home-made mashed popatoes & corn. Well I
was excited because my home was smelling sooo good (yeyyy) .. Was I proud of me! since I never made meatloaf before
and how could I go wrong with that? right? ummmmmmmm well wrong!! Oh My God! that was so gross looking! the meatloaf
didn't stay together like it supposed to! mine was um all spread & break into pieces in the baking dish looked more
like ground beef for tacos! *yuckkk* and the grease over-floating!? wtf was that? what happend? when I put it in the
baking dish was shape as a square.. Mashed potatoes came out very mushy I think I added to much sour cream or butter
?~ the only thing that was looking good was the corn lol... omg I was so upset and I didn't have time to fix
anything else... So we went out to eat dinner instead. I hope the man that marries me knows how to cook because if
he doesn't he will be in for a rude awakening plus he will be eating lots of tv dinners lol...
I need a good
meat-load recipe...

cream and milk. Then you slowly add sour cream while still mixing. After that is mixed you slowly add enough milk to
get the desired consistancy.

Banana Nut Bread
This will make two loaves. It's also good cooked in a clay flower pot.
Heat the oven to
350
Mix together 3 1/2 cups flour
6 Teaspoons baking powder
teaspoon of salt
Beat really well, until almost
fluffy:
2/3 cup shortening
1 1/2 cups sugar
1 tablespoon lemon juice
3 eggs
8-9 very ripe mashed bananas (my
daughters loved doing this part when they were younger. If their hands are clean the can mash them with their
hands.)
Add the flour mixture and mix completely.
Stir in 1 1/2 cups chopped pecans or walnuts.
Put in
greased and floured pans. Let batter rest in pans for about 15 minutes before baking. They bake for about an hour.
Pecan Balls. This is my all time favorite Christmas cookie. They're very rich.
Beat 1 cup of butter then
slowly add 1/4 cup sugar and continue to beat until creamy.
Add 3 teaspoon Brandy or Vanilla. Brandy is better.
I
use a rotary cheese grater for this next step.
Shred 2 cups pecans and mix with 2 cups flour.
Mix with the butter
mixture until smooth.
Bake at 325 for about 20 minutes. When you take them out of the oven, drop them into a
bowl of powdered sugar and coat well. Set on waxed paper to cool.
