    Default Favorite recipes

    I got this out of Food and Wine (my all time favorite mag.)about 6-7 years ago. It is so simple to make, has very few ingredients, looks lovely and tastes fantastic. I serve it over pasta.

    Honey-Rosemary Chicken with Cherry Tomatoes
    4 SERVINGS

    8 garlic cloves, sliced 1/8 inch thick
    2 tablespoons olive oil
    4 boneless chicken breast halves, with skin
    Salt and freshly ground pepper
    2 tablespoons honey
    1 pint cherry tomatoes
    Ten 4-inch fresh rosemary sprigs
    1 or 2 small dried hot chiles
    1 tablespoon red wine vinegar

    1. Preheat the oven to 425°. In a 9-by-13-inch enameled cast-iron or glass baking dish, toss the garlic with 1 tablespoon of the oil. Bake in the oven for 5 minutes, or until sizzling but not browned.

    2. Place the chicken on a sheet of wax paper, skin side down. Season with salt and pepper and spread with half of the honey. Remove the dish from the oven and push the garlic to the side. Arrange the chicken breasts in the hot dish, skin side up. Season with salt and pepper and spread with the remaining honey.

    3. Surround the chicken with the cherry tomatoes, 6 of the rosemary sprigs and the dried chiles. Drizzle the remaining 1 tablespoon olive oil on top and season with salt and pepper. Bake for about 25 minutes, occasionally basting with the pan juices, until the chicken is cooked through. Transfer the chicken, tomatoes, and garlic to plates. Stir the vinegar into the baking dish and spoon the sauce over the chicken. Garnish each serving with a rosemary sprig.

    Oh wow there's some real good

    stuff in here I might just print out a few! I will have to get back on this one since I have some good recipes . I

    can make some pretty good Mexican food... (of course) but I have some other recipes too...

    Jerk Chicken (No Jokes)

    6 lb.

    Roasting Chicken 1 tbsp. Salt 2 tsp. Garlic powder 1 tsp. Paprika 1 tsp. Soya Sauce 1small onion 3 tbsp. Jamspice

    Jerk Seasoning

    First, rub the whole chicken with salt. Grater the onion and rub it into the chicken. Add the

    Paprika and Garlic powder to the chicken. Rub the Jerk Seasoning all over the whole chicken and allow the chicken to

    marinate for at least 2 hours. Roast in oven at 350 degrees Fahrenheit for 1 to 1 ½ hours.

    It could be a baked potato, but

    baking is for girls. Just go to the chippy (fish and chip shop) and get some chips.

    My steak has to be

    slightly pink in the middle, anything less cooked and it's going back to the kitchen

    Beer of choice

    would probably be Grolsch, but I'm not usually that fussy.

    You still didn't answer about what cut of steak

    you prefer, ribeye, filet mignon, t-bone, etc. Is Grolsch a dark beer?

    My favourite cut...I don't know, anything but cheap rump or sirloin. As

    long as it's thick enough to stay juicy I'm happy. I did have a very nice ribeye when I was in Florida, so if I

    had to choose I'd say that.

    As 'lana said, Grolsch is a larger with a cool swing-top bottle (not

    dark or anything that fancy)

    Dessert:

    You will need:

    A box of chocolate ice cream sandwiches with vanilla ice cream in the

    middle
    1 bowl Cool-Whip
    caramel sundae topping
    chocolate sundae topping
    Kahlua
    Heath toffee

    bits
    chopped, toasted pecans


    Put a single layer (12) of the ice cream sandwiches in the bottom of a

    casserole dish. Drizzle a third to one-half a cup of Kahlua over the sandwiches. Liberally drizzle both the caramel

    and chocolate sundae toppings. Pour on half a bag of Heath toffee bits. Add a single layer of Cool Whip over the

    Kahlua (use the whole bowl if you can). Top with toasted pecans.
    Pop in the freezer for an hour or so, then

    serve.


    Edited because I forgot the toffee bits and because I put the Cool Whip out of order.

    Default Ettouffe

    Just got this recipe a

    couple weeks ago. It's pretty good.

    Crawfish or Shrimp Ettouffee:

    Melt 12 Tablespoons Butter in a large

    saucepan.
    Add 1/3 cup flour and cook over medium heat, stirring frequently until light brown.

    Add:
    2 finely

    chopped large Onions
    1 Finely chopped Bell Pepper
    1/4 Teaspoon Pepper
    5-6 minced Garlic cloves.

    Cook over

    medium heat until veggies are cooked and lightly browned.

    Add:
    2 pounds peeled, deviened Shrimp (40-50 count)

    or 2 ponds cleaned Crawfish Tails
    2 Tablespoons Lemon Juice
    2-3 Tablespoons Cajun Seasoning.
    Enough Water to

    cover.

    Bring to a slow boil and simmer covered about 30 minutes. If you plan to store to reheat later, thicken

    with some cornstarch dissolved in water to retain consistancy.

    Just before serving add 1/4 cup chopped green

    onions.

    Serve over rice.

    PS: I finally got a sourdough starter that's been in use for about 10 years. My

    first batch of bread is rising right now.
